Sesame Brittle

Author: Mary DiSomma

Brittle is versatile and so easy to make. Just melt water, sugar, and salt together. Add sesame seeds, peanuts, pistachios, or shredded coconut; you can even dip it in chocolate! It has a crunchy bite and breaks apart. It has a brittle texture, as the name implies! Enjoy it on its own or as a topping for salads, yogurts, and ice cream!

Instructions

  • Place the sugar and water in a small saucepan over medium heat. Swirl the pan occasionally until the sugar melts and turns a medium amber color (8-10 mins).
  • Stir in the sesame seeds and salt, then immediately pour the mixture onto parchment paper or a silicone mat. Quickly spread it thin with the back of a butter-greased spoon and let it cool.
  • With a wet knife, chop the cooled sesame brittle into very small pieces. Transfer it into a lidded tupperware until you’re ready to use it. Enjoy!
