Chicken Caesar Crunch Wrap

I love a good Caesar salad, so this sandwich is a perfect variation. It combines tender roasted chicken with creamy Caesar dressing, crisp romaine, and crushed tortilla chips for extra crunch. You could call it a Caesar salad sandwich or a chicken Caesar sandwich. Whatever name you give it, the idea is the same: all those classic Caesar flavors tucked into a handheld lunch.

I love using leftover roast chicken, like my Spatchcock Roast Chicken, and making Caesar dressing from scratch when I have a few extra minutes. Store-bought dressing works perfectly well when you're just trying to get lunch on the table.

One of my favorite tricks when assembling the wrap is to place the lettuce between the tortilla and the chicken to create a barrier that keeps the tortilla from becoming soggy.

Ingredients

Note: Quantities for some ingredients vary slightly depending on the size of your wrap.

Instructions

  1. In a small bowl, combine the chicken with the caesar dressing. Toss until well coated.
  2. Remove the lower ⅓ stem portion of lettuce and discard. Lay your tortilla flat on a clean surface and place the lettuce leaves in the center, gently crushing the spines so they lay flat. This will create a barrier between the tortilla and the filling so your wrap doesn’t get soggy.
  3. Add the chicken caesar mixture on top of the lettuce, followed by a few avocado slices, if using.
  4. Sprinkle with the crushed tortilla chips and fold the sides of the tortilla inward and roll it up tightly from the bottom to form a secure wrap. 
  5. Cut in half and serve with some extra dressing to dip your wrap, if desired.

Caesar Dressing

This creamy homemade Caesar dressing gets bright flavor from caramelized lemon, mellow garlic, anchovies, Parmesan, and Greek yogurt. Perfect for salads, wraps, and sandwiches.

  1. Cut the lemon in half and place cut-side down in a hot, dry pan over medium-high heat until deeply caramelized and lightly charred (6 to 8 minutes). Let cool, then squeeze into your immersion blender or food processor, removing any seeds if necessary.
  2. Reduce the heat to low, then add the olive oil to the same pan and turn off the heat. Add the grated garlic, swirl it around in the pan and let it sit for a minute or two. This mellows the garlic and infuses the oil. Do not scrape at the charred lemon from the base of the pan, it will be too bitter.
  3. Add the anchovies to the blender cup, followed by the dijon, honey and yogurt. Blend everything together, then slowly add the warm garlic oil until the dressing becomes glossy and everything is fully combined.
  4. With a silicone spatula, scrape the dressing out into a bowl and stir in the parmesan with plenty of black pepper to your taste. The dressing will keep in an airtight jar in your refrigerator for up to 4 days.
