Honey Dijon Champagne Vinaigrette

Champagne vinegar adds light, crisp, floral notes to this classic honey Dijon dressing. Champagne vinegar is made from the same grapes as Chardonnay and pinot noir wines, but to become vinegar, it ferments into acetic acid. This dressing pairs perfectly with light greens or my Tonnino Tuna Niçoise Salad.

Instructions

  1. Prepare the vinaigrette: In a mixing bowl, combine the vinegar, lemon juice, mustard, honey, salt, and pepper. Whisk to combine.
  2. Slowly whisk in the olive oil until combined.
  3. Drizzle with some of the vinaigrette on to your salad either in a large platter or on individual plates. Serve the remaining dressing on the side. So good!
