Strawberry Kiwi Salad With Poppyseed Dressing

Author: Mary DiSomma

If you’re in the market for a simple yet delicious salad, this sweet and vibrant combination of strawberries, kiwi, and crunchy romaine is easy to make, yet really pops with taste. Even the dressing is a simple concoction of just five ingredients; I recommend making it the night before you plan to serve the salad so that all the various flavors have time to meld together. Typically, if a salad is made with nuts and fruit, the usual suspects are sunflower seeds or candied walnuts and raisins or dried cranberries, but I leave the crunch up to the lettuce and the sweetness comes from the classic combination of kiwi and strawberries. Sweet salads are uncommon and this one is uncommonly delicious. I have trick I like to use to remove the kiwi skin. Using a paring knife, remove a piece from the top and bottom of the fruit. Then take a teaspoon, and place it between the skin and the flesh of the fruit; you should be able to carefully scoop it out!
