Mascarpone Frosting

Mascarpone cheese comes from Northern Italy. Its high fat content gives it a rich texture. It's a wonderful ingredient because it works in both sweet and savory dishes.

When whipped into this frosting, it becomes light and airy. It's a great alternative to cream cheese.

Mascarpone (yes, the Italian cheese!) is the perfect base for this classic rich and creamy frosting that is an easy topping for cupcakes and cakes.

  1. In the bowl of your stand mixer, beat the mascarpone cheese and butter until light and fluffy. A handheld mixer can also be used. 
  2. With the mixer on low speed, slowly add 2½ cups of the confectioners’ sugar along with the vanilla. If the frosting seems too soft, add some or all of the additional confectioner’s sugar. 
  3. I like to pipe the frosting onto muffins or cupcakes so I make my frosting thick enough to hold its shape when piping.
  4. Using a star-shaped pastry tip, fill a pastry bag with the frosting. Top each muffin with a generous swirl of frosting.
