When I was testing out this Southwest Cheeseburger Slider recipe, it was an instant hit. My dear friend Bud requested some extra spice—that’s how chorizo got involved. Either way you make them, these little burgers have just the right amount of flavor (a lot) and are such a fun twist on the classic cheeseburger. They’re perfect for parties, especially summer BBQs. I LOVE setting up a DIY burger bar where everyone can build their own—just set out some toppings and condiments and let the grill master do the rest!

  1. In a mixing bowl, combine the ground beef, white onion, garlic, chili powder, paprika, oregano, basil, salt, and pepper. Divide into 12 patties (2 ounces each). Place on a baking sheet. Cover with plastic wrap and refrigerate until you’re ready to cook. You can make slider patties about 2 hours ahead and keep them in the fridge.
  2. Have all of your toppings ready before you start grilling your sliders. You will need the cheddar cheese slices, refried beans that have been heated, guacamole, salsa, sour cream, black olives, and lettuce. You will also need 4-inch toothpicks or wooden appetizer skewers to secure your sliders once all the toppings are piled on.
  3. Preheat your grill to medium-high (375 degrees). If you like, use a cast iron grill plate. Remember to place it on the grill before you start heating it up so it is sizzling hot! When hot, place patties on the grill. Cook for 2 minutes, then flip; cook for 2 to 3 additional minutes depending on desired doneness. Top with cheddar cheese. Cover the grill and cook for 30 seconds to melt the cheese.
  4. Now it’s time to build your slider. Spread the beans on the toasted bottom of the slider buns. Top with a grilled meat patty. Now layer with guacamole, salsa, sour cream, black olives, and lettuce. Secure the top bun on the sliders with a toothpick.

Like so many delicious things, the exact origin of the slider is hard to pin down. Most folks credit Walter Anderson, who created the “mini-burger” in Wichita, Kansas, back in 1916. Just a few years later, Anderson founded White Castle—the restaurant chain that made sliders famous. Thanks, Walt!


The original White Castle slider was a thin patty with diced onions—simple. And they sold for just 5 cents!
