Depending on who you ask, humans have been enjoying gingerbread for at least a thousand years, and possibly a thousand more. Its association with the holidays (and specifically gingerbread houses) seems to stem from a German tradition begun in the early 19th century. Ginger’s reputation for therapeutic effects, however, have been known for millennia, and its soothing effect on digestion make it a great addition to any holiday spread.
This biscotti recipe uses traditional gingerbread spice. The cookies can be served with lemon curd or drizzled with melted almond bark. Serve them with a creamy cup of hot chocolate. As a variation, toss in ½ cup dark or golden raisins and/or ⅓ cup semisweet chocolate chips. Nuts are fair game as well.
