Rosemary Fig Glaze

Author: Mary DiSomma

Dried figs have an earthy, sweet flavor with a chewy texture. This simple glaze is perfect for savory and sweet recipes. I love it with my Cider Brisket, but it is also delicious with roast chicken, turkey, or pork. I also like to serve it at room temperature on my cheese and charcuterie boards in place of jam; it goes great with goat cheese, sharp cheddar, and cured meats. You could also add it to desserts!

Instructions

  1. Combine figs, cider, rosemary, vinegar, mustard, and salt in a small  saucepan. Simmer over medium heat until figs are soft and the mixture thickens slightly, about  10 minutes.
  2. Let cool slightly, then mash gently until a soft paste forms. Transfer to a serving dish and serve!
  3. Optional: If you are serving the glaze with a roast like brisket, chicken, or turkey, you can add 3/4 cup of the drippings to glaze and simmer for an additional 5 minutes to combine. Yum!
